Creamy Mashed Potatoes
INGREDIENTS
4 lbs of potatoes
1 cup of butter
1 cup of half and half
1 tablespoon of salt
Rosemary
Garlic
INSTRUCTIONS
Peel potatoes and cut into chunks of similar size. Place in a heavy pot, cover with water and add salt. Simmer potatoes until they are soft, using a fork to test. Simmer half and half for 5 min. with a sprig of rosemary and garlic; strain out garlic and rosemary. Strain potatoes from water and put in a mixer. Whisk potatoes with butter and half and half until smooth, about 3 or 4 minutes.
