Green Chile Cheddar Cheese Ball
INGREDIENTS
2 cups (8 oz.) freshly shredded sharp Cheddar cheese
1/3 cup butter, room temp.
3 ounces cream cheese, softened
1/2 teaspoon kosher salt
½ teaspoon paprika
½ teaspoon cumin
¼ teaspoon granulated garlic
¼ teaspoon black pepper
7 oz can chopped green chilies
1/2 cup chopped pecans
INSTRUCTIONS
1. In a mixer with the paddle attachment, beat the cheddar cheese until it becomes spreadable; mix in butter, cream cheese, salt, paprika, cumin, garlic, black and can of chilies.
2. Shape into a ball and refrigerate for at least 2 hours. Roll cheese ball in chopped nuts and cilantro if desired.
3. Wrap in plastic wrap. Store in refrigerator up to 1 week.
